Preparation Steps

In a medium pot, bring water to a boil. Add the noodles and prepare the sauce in the meantime while they cook.

  • 1 tbsp peanut butter
  • 1 tbsp chili oil
  • 1 tbsp soy sauce
  • 0.5 tbsp dark soy sauce
  • 1 tbsp Chinese black vinegar
  • Sichuan peppercorn (ground or whole)
  • Sugar (to taste)
  • 1 garlic clove, minced
  • A splash of noodle water
Prepare the sauce: Combine all sauce ingredients (peanut butter, chili oil, soy sauce, dark soy sauce, Chinese black vinegar, Sichuan peppercorn, sugar, minced garlic, and a splash of noodle water) in a plate or bowl (this will be the final serving dish). If the noodles finish cooking before the pork is ready, add the noodles to the prepared sauce and stir to coat.

  • 100g pork mince
  • 1 garlic clove
  • 1 tbsp light soy sauce
  • 0.5 tbsp Shaoxing wine
  • 0.5 tbsp dark soy sauce
  • Ground pepper
Prepare the pork topping: Fry the pork mince in a separate pan until it's mostly browned. Then, add the rest of the topping ingredients (garlic, light soy sauce, Shaoxing wine, dark soy sauce, and ground pepper) and fry for a few more minutes until cooked through.

  • Spring onions (chopped)
  • Cucumber (julienned or sliced)
  • Peanuts (crushed or chopped)
  • Lime juice (optional spritz)
If not already coated, drain the cooked noodles and add them to the prepared sauce bowl. Toss well. Top the noodles with the cooked pork mince, and garnish with spring onions, cucumber, peanuts, and optionally a spritz of lime juice. Serve immediately.
