1 whole fish (e.g. bream/Dorade, trout, or any locally sourced fish)
Prepare the fish: Remove scales and cut off fins on the sides.

2 tbsp cornstarch
1 tsp salt
Mix the cornstarch and salt, and rub the mixture thoroughly onto the fish.

Heat oil in a pan. Fry the fish for 5-10 minutes at medium heat while covered with a lid. Flip the fish and repeat the frying process for the other side. Take the fish out of the pan and set it aside.

5-6 slices of ginger
Distribute the 5-6 slices of ginger evenly in the same pan. Place the fried fish on top of the ginger and cover the pan with a lid. Let the ginger fragrance infuse for 2-3 minutes. Flip the fish and repeat the infusion for the other side.

2 tbsp soy sauce
3 tbsp water
1 tbsp sugar
Mix the soy sauce, water, and sugar in a bowl. Pour the mixture over the fish in the pan. Let it simmer for a minute to create a glaze, then remove the fish from the pan and serve immediately with rice.
