6-8 dried shiitake mushrooms
Soak the shiitake mushrooms in warm water for 1 hour. Drain the mushrooms, squeeze out any remaining liquid, remove hard parts, and cut them into slices.

Wash and cut your chosen vegetables into bite-sized pieces.

Tofu
Place the tofu in a kitchen towel and press to remove excess liquid. Cut the tofu into cubes. Heat some oil in a frying pan, add the tofu, and sprinkle with salt. Fry until golden on all sides, then remove the tofu from the pan and set aside.

1 onion, diced
1 clove of garlic (garlic press)
1 tsp of ginger (garlic press)
Add the diced onion to the pan. As soon as the onions are soft, add the garlic and ginger and fry until fragrant. Next, add the sliced shiitake mushrooms and fry for 3-4 minutes. Finally, add the other vegetables.

3-4 tbsp soy sauce
3-4 tbsp sesame oil
2 tbsp oyster sauce or vegetarian stir fry sauce
Black pepper, to taste
Lemon juice, to taste
Add the sauces (soy sauce, sesame oil, and oyster/vegetarian stir fry sauce) one after the other to the pan and stir to distribute evenly. Add the previously fried tofu and mix it in. Season with black pepper and a splash of lemon juice to taste.
