Almost Chimichurri (Herb Sauce)

A fresh, vibrant, and quick chimichurri-inspired herb sauce made with parsley, cilantro, mint, chili, garlic, and vinegar, perfect for grilling.

Preparation Steps

  • Parsley
  • Cilantro
  • Mint
  • Etc. (other desired herbs)
Finely chop all herbs (Parsley, Cilantro, Mint, etc.). Do not use a food processor or grinder to maintain texture. Add the chopped herbs to a bowl.

  • 1-2 small chilis, deseeded
Cut the chilis into fine stripes and add them to the herbs.

  • 2-4 cloves of garlic
Chop the garlic finely or process it with a garlic press. Add to the herb and chili mixture.

  • Olive oil
Add enough olive oil to the mixture until the herbs are completely covered.

  • 1-2 tbsp vinegar (red wine/apple/herbal vinegar) OR Lemon/lime juice
Add the vinegar or lemon/lime juice as well, according to preference.

  • Coarse sea salt
  • Pepper
Season the mixture to taste with coarse sea salt and pepper. Tip: Be generous with the salt!

Mix all ingredients well and let the sauce sit for at least 10 minutes; the longer it sits, the better the flavors will meld.
