Glass Noodle Salad

A fresh and flavorful glass noodle salad with a sweet and acidic lime dressing, fresh herbs, and crunchy peanuts.

Preparation Steps

  • 1 package glass noodles (~100g)
Soak the glass noodles in boiled water until soft, then drain.

  • 1 carrot
Cut the carrot into Julienne stripes (thin sticks), and set aside.

  • 1 spring onion
  • 1 handful of mint and/or coriander leaves
Cut the spring onion into fine slices. Set aside the spring onion and mint/coriander leaves.

  • 1 tbsp roasted peanuts
Crush the roasted peanuts and set aside.

  • 1 cm ginger (garlic press)
  • 1 clove of garlic (garlic press)
  • 2 limes, juice
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce or vegetarian stir fry sauce
  • 2 tbsp sesame oil
  • 2 tbsp brown sugar
  • 1 tbsp oil
  • 1 chili, deseeded and sliced (optional)
Mix together the dressing ingredients (ginger, garlic, lime juice, soy sauce, fish/stir fry sauce, sesame oil, brown sugar, oil, and chili) and balance the taste of sweet and acidic with extra lime juice or sugar as needed. Pour the dressing over the glass noodles and let it soak for at least 1 hour.

Before serving, garnish the salad with the reserved carrot, spring onion, mint/coriander, and peanuts. Toss the salad shortly before serving.
